  • 0.75 cupmilk, whole or 2%
  • 2 tspblack tea, loose leaf or 2 tea bags
  • 15 gginger, fresh, grated
  • 3 pcsgreen cardamom pod, crushed lightly
  • 2 pcsclove, whole
  • 0.5 pcscinnamon stick, small
  • 2 tspsugar, or to taste

Equipment

serving cups · fine-mesh sieve · small saucepan

The method

Step by step

  1. 1

Combine the water, grated ginger, crushed cardamom pods, whole cloves, and cinnamon stick in a small saucepan.

    About 1 min

  2. 2

Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 3-5 minutes to allow the spices to infuse.

    About 5 min

Cook’s note: Crushing the cardamom pods slightly helps release their flavor more effectively.

  3. 3

Add the black tea and milk to the saucepan.

  4. 4

Bring the chai back to a rolling boil, then immediately reduce the heat and simmer for another 2-3 minutes, stirring occasionally, until the tea is well brewed and the flavors have melded.

    About 3 min

Cook’s note: Be careful not to let the milk boil over; reduce heat quickly if it starts to rise.

  5. 5

Stir in the sugar until dissolved.

    About 1 min

Cook’s note: Adjust the amount of sugar to your personal preference.

  6. 6

Strain the chai through a fine-mesh sieve into serving cups, discarding the solids.

  7. 7

    Serve hot and enjoy immediately.
