Ingredients

  • 12 pcszucchini flower, stems and stamens removed

batter

  • 100 gall-purpose flour
  • 120 mlsparkling water, very cold
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

frying

  • 500 mlvegetable oil

Equipment

deep pan · slotted spoon · paper towels · medium bowl · whisk

The method

Step by step

  1. 1

Gently clean the zucchini flowers by removing any visible dirt and carefully extracting the stamens from the inside and trimming the stems.

    About 5 min

Cook’s note: Be very careful, zucchini flowers are delicate and tear easily.

  2. 2

In a medium bowl, whisk together the all-purpose flour, salt, and black pepper.

    About 1 min

  3. 3

Gradually add the very cold sparkling water to the dry ingredients, whisking until a smooth, thin batter forms.

    About 2 min

Cook’s note: The cold water helps create a crispier batter.

  4. 4

Heat the vegetable oil in a deep pan or pot to 170°C (340°F).

    About 5 min

Cook’s note: Use a thermometer to ensure the oil is at the correct temperature for even frying.

  5. 5

Dip each zucchini flower into the batter, ensuring it's lightly coated on all sides.

    About 3 min

Cook’s note: Allow any excess batter to drip off before frying.

  6. 6

Carefully place a few battered zucchini flowers into the hot oil, being careful not to overcrowd the pan.

  7. 7

Fry for 2-3 minutes per side, or until golden brown and crispy.

    About 6 min

  8. 8

Remove the fried flowers with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

    About 1 min

  9. 9

Serve immediately while hot, optionally with an extra pinch of salt.
